Boy oh boy, we have been in a Latin food kinda' mood! And who can blame us? Latin American dishes are sooo yummy and some of the best comfort foods around. Alexis' Yummy black bean and sweet potato tacos reminded me of my own tasty black bean recipe. Instead of using tostones as a side dish, mine are incorporated right into the main meal. These are so very easy to make and a quick and delicious dinner when you have had a busy day. And it gives your family a chance to enjoy something a little out of the ordinary from traditional American dishes. And you do not have to be a Vegan or follow a plant based diet to fall in love with this recipe!
Everything in the recipe is naturally plant based, including the Just Like Feta vegan cheese that my family uses. If you prefer non-vegan cheese, just substitute for traditional feta cheese. But you may want give it a try; it tastes great!
Here is the recipe for my Vegan Black Bean Tostones!
VEGAN BLACK BEAN TOSTONES
Prep Time: 15 minutes Cook Time: 25 minutes
INGREDIENTS
1 or 2 cans black beans
Vegan feta cheese
1/4 cup fresh cilantro, finely chopped
2 tablespoons fresh lime
1/4 tsp salt to taste
Splash of white wine vinegar
INSTRUCTIONS
1. Set frozen tostones out to dethaw at room temperature for about 10 or 15 minutes.
2. Finely chop 1/4 cup cilantro and shred your feta cheese.
3. Cook black beans on the stove with the lime juice, white wine vinegar, salt, and any other spices you prefer on medium heat for about 15-20 minutes.
4. While the beans are cooking, use a pan coated with cooking spray and several tablespoons of your choice of cooking oil. Turn to medium-high heat for a few minutes to heat the oil. After a few minutes, add your tostones. Cook for about 5 minutes and then decrease to medium heat and flip the tostones. Cook on the other side another few minutes.
5. Once the the tostones have cooked and cooled for a few minutes, top with black beans, feta, and cilantro.
Viola! Dinner served!
